Depending on the configuration of your kitchen you may have an under-mounted hood (below a cabinet), freestanding hood (wall or ceiling mounted), or hood fan insert. Keep in mind; depending on the size of your hood fan and C.F.M (cubic feet per minute) rating you may need to adjust the size of your existing HVAC to accommodate.
